Sweet Potato Salad

Easy and quick to make.

Take 250ml (1 cup) grated, peeled, raw sweet potato and add 500ml (2 cups) diced apple, 125ml (½ cup) broken pecans, 125ml (½ cup) seedless raisins, 60ml (¼ cup) diced celery and 125ml (½ cup) mayonnaise .

Mix well and serve chilled on lettuce.

Serves four.
